The other day I cooked Singapore Hainanese Chicken Rice ? ? using a really simple recipe, plus some other dishes for my colleagues in China! Check it out!
Ingredients:
Chicken
Sesame oil
Salt
Garlic
Rice
Prep chicken with garlic inside cavity and rub some salt on the chicken to marinate.
Put chicken in a big pot with room temperature water.
Bring to boil.
Turn off and rest for 25-30 mins depending on size of chicken.
Poke thigh part with a chopstick and see if there’s blood coming out. If clear juice runs out, it’s cooked.
Take chicken out and rinse with cold water to smooth skin.
Now to prepare rice, fry rice with garlic and a bit of sasame oil.
Then transfer to rice cooker and use the broth from the chicken and cook.
When rice is cooked, just stir it.
You are done!!
Chop the chicken, pour a mixture of soya sauce and sesame oil over.
For the chilli, blend red chilli with garlic and add oil.
That’s it!
